For the Commis Chef, the focus should be on basic professional kitchen skills, mise en place, food preparation, hygiene, discipline, and willingness to learn. I’d keep the salary slightly below Demi Chef level.

Aura Experience is looking for hardworking, enthusiastic and passionate Commis Chefs – Asian & Western Cuisine to join our professional culinary team.
This is an excellent opportunity for chefs who want to build their culinary career and develop professional kitchen skills in a Fine Dining / Premium Restaurant environment.

Reports To: Demi Chef / Chef de Partie / Sous Chef
DUTY HOURS: Duty according to restaurant operation.
KEY RESPONSIBILITIES
Assist Demi Chefs, CDPs and Sous Chefs with daily kitchen operations.
Perform basic mise en place and food preparation.
Wash, clean, peel, cut and portion vegetables, meat, seafood and other ingredients as instructed.
Assist in preparing Asian and Western dishes according to standard recipes
Assist with preparation of sauces, stocks, marinades, dressings and garnishes.
Support Asian preparations including rice, noodles, vegetables, sauces and basic dishes.
Support Western preparations including pasta, salads, soups, sauces and basic preparations.
Follow recipes, instructions and portion standards accurately.
Maintain the required quantity of mise en place before and during service.
Ensure ingredients are properly stored, labeled and dated.
Follow FIFO/FEFO procedures.
Maintain proper food hygiene and prevent cross-contamination.
Keep the workstation, utensils and equipment clean and organized.
Assist senior chefs during busy service periods.
Minimize food wastage and use ingredients responsibly.
Report damaged ingredients, stock shortages or equipment problems to the senior chef.
Follow all kitchen SOPs, hygiene and food-safety procedures.
Learn and improve cooking techniques under the guidance of senior chefs.
Maintain discipline, punctuality and teamwork at all times.
